TKN Chicken with Sweet Potatoes & Cabbage

If you’re a fan of crunch, you’ll love this salad, which offers varying levels of texture: heartily crunchy cabbage, creamy sweet potato and substantial chicken.  We use refrigerated fresh cabbage as with cinnamon to bring out the sweet potato.

TKN Chicken with Sweet Potatoes & Cabbage

Ingredients

chicken breast (raw)

125g

cabbage

85g

sweet potato

75g

extra virgin olive oil

2g

salt

pinch/ to taste

pepper

pinch/to taste

cinnamon

pinch/to taste

instructions

 

  1. Season raw chicken breast with salt and pepper. Grill chicken on medium heat until cooked.
  2. Preheat oven to 375. Spray cooking sheet with coconut oil spray. Spread sweet potatoes, 1 inch cubes, in a single layer. Cook for 15 minutes. Scrape the potatoes around on the pan and cook for another 15 minutes.
  3. Shred cabbage, season with salt and pepper. Sprinkle all items with olive oil.
  4. Enjoy!
